Is there a way if I'm in a list, say 'work' to add a task and NOT have it automatically add to the work list?

Yes; you can specify other properties. for example, if your work list defines list:Work tag:phone, you can add a different task by selecting something like list:Home tag:errand.
From the FAQ: Task properties in Smart Add will take precedence; so, if you added "Pick up the milk !1" to a Smart List with criteria priority:3, the resulting task would take its priority from Smart Add (not the Smart List) and have a priority of 1.
