How do I stop sharing with someone

A simple question, but I can't seem to work it out, or find the answer in the help/forums...
How do you stop sharing a list with a person or group? The only way I can think to do this is to create a new list... move all entries to the new list... setup the sharing on the new list with the people excluding the person you want to remove.
Any ideas anyone?
