Sorting options

I just read elsewhere in the forum that the subtask sorting order is governed by the sorting order of the list. So if that still holds, my question is answered.

Yes, you're right that subtasks are sorted by the list.
What I suggest for your desired type of setup is to organize the list by drag and drop (so you can sort your subtasks that way) and then use a Smart List or other view (like Today, tag view, etc.) where you can sort by due date or other property.
