Recently, I have decided that I don't want to see work related tasks in this smart list, so I added the following more term, but it doesnt seem to work

tag:office NOT (status:incomplete and dueWithin:"7 days of 16 May 2012")

What am I doing wrong?

Glad you got it working! Yes, for excluding a tag this way, the AND NOT tag:X construct is often helpful.
