Any task set to repeat "after 1 weekday" will only repeat when you mark it complete, so if you postpone your tasks over the holidays to the first day you return, that would work.
If, on the other hand, you have the tasks set to repeat "every 1 weekday", then those will continue while you're gone; however, if you edit the due date of the task on the first day of your holiday, and change it to the day you return, it wouldn't keep repeating in the meantime.
