Hmm, I never noticed that the date on the notes is reset for duplicated tasks. I have noticed that the dates for notes are difficult to maintain, however.

For the notes that I need to be sure to maintain the date, I enter the date manually in the note itself. I have had a few times when I've entered a note (where the date I entered it was important) only to find a mistake the next day or a long time after. But when I edit the note, the date changes. So, now I enter the date manually if the date is important to keep.

I use the Duplicate Task feature regularly and noticed that when I duplicated a task, the date and time of all the attached notes is set to the current date and time of the new note.

I would prefer that the date time of the attached Notes would stay the same as they were on the previous task, as they provide a sort of history that is important for my way of working.
