how do I see all the complete tasks in all lists by time?

You can use the completed* search operators to search for completed tasks constrained to a particular day. For example, you can search completed:today, completedAfter:Monday, etc. to search for completed tasks.
Great question! I like to use RTM to track what I ACTUALLY did in a day as well.
One way to do this would simply be to create a smart list with an empty search field (to search for ALL tasks). Then you could click on the completed tasks link like in any other list and they are automatically sorted by time and date (most recent first).
