completed tasks

Completed tasks are kept forever; RTM never deletes them.
You can find them in any list/Smart List/search (unless the latter two are set to exclude them/only show incomplete tasks). There will be a link on the right side when you have no tasks selected that will switch between showing incomplete and completed tasks.
You could also use the search operators to search for completed tasks. Your example of a week's worth would be completedWithin:"1 week of today".
