How do I edit a tag in complete tasks?

Can't you "uncomplete" it, change the tags, then mark it as complete again?

Yes, this will work too (as long as you don't mind that the 'completed' date will be changed to today when you complete the tasks again) -- sorry I forgot to mention this option. Thanks for the suggestion, Peter!
