Changing the details on some but not all completed repeating tasks

You're correct that when using an "every" repeat, all instances of the series are connected, even after they're completed. Since all the occurrences of the task are part of the same series, they share a name (and other properties, such as tags), so it's not possible to rename a single occurrence.
As you mentioned, it is possible to modify a single occurrence of the series when using "after" repeats, as each occurrence is a distinct task with its own properties.
