Regular tasks move forward when "ticked off" on a different day

It sounds like you have the repeat set to "after 1 week", which generates the next instance from the date of completion.
You may prefer to use the repeat "every 1 week", which will generate the next task based on the due date, not the completion date.
Also, "every Saturday" would work also, which would keep the next task due on Saturday, even if you were to change the due date of an upcoming task before the following one is generated.
