Share a list and then let others own and change it but not change original?

Sharing gives your contacts full control over the tasks (just as you have). What you may want to do instead is to duplicate the tasks, move them to a new list (or move yours out of the way), and then to share the duplicated tasks.
That way, your original tasks will be untouched, and the duplicates will be shared with and changed by your contacts.
