Is there a way to make RTM stop automatically setting dates/times for my new tasks?

(I'll be left with "Make arrangements for party on" with a due date of "today"...but now I don't know which party this was for.)

You can disable Smart Add for a given task by prepending it with the ~ or by surrounding a portion of the name with quotation marks. (The latter method is most useful if you want to add something else with Smart Add.)
So either
~Make arrangements for party on May 10
Make arrangements for party on "May 10" May 1
should work for you.
You could also turn off Smart Add altogether if you never wish to use it.
